LA is a once a year type of deal for me. Every January, I compete in a local tournament and use the free time to scout for new bites. This year, I visited Golden State which was listed as one of the top burgers in LA and luckily enough… just around the corner from our Airbnb. I was starving and craving some burger grease to ease some of my pre-tournament anxieties.
My boyfriend, good friend and I stopped by on a quiet Saturday night and found it not too busy. We all ordered “The Burger” which was appropriately named, with all the classic,fatty compliments for juicy burger fountain : beef, cheddar, smoked bacon, aioli, ketchup and arugula…for funsies.
Condiments aside, a great burger is all in the beef. Not sure where they source their beef but it’s some high quality shit. I ordered my burger medium rare and can still remember the texture in my mouth: juicy, fatty, savory and unapologetically tender. I took a bite and found myself playing with the meat in my mouth (pause) after it dissolved/ fell apart. It doesn’t dissolve like butter but it doesn’t crumble like shitty beef either. It’s somewhere in the goldilocks between.
Peeps this is one of the best burgers I’ve had in awhile, aside from Juniper in Williamsburg, which I already reviewed for you pleasure. DTLA is infested with good eats, Golden State is highly recommended from your snobby bougie and critical New Yorker. Ahem…ME.
